Spice Rack and organizing

Here are some quick pictures.
Most of the bagged food has gone to my mom. She's graciously accepted the request to help us undertake this adventure and change of lifestyle. We'll be in contact with her quite often for resupply via shared spreadsheet for everything that we've been planning and stocking for the past year such as: dehydrated and freeze dried foods, coffee and tea, soap, clothing, boots and the spice rack. We plan to acquire a lot of resupply items along the way as well.
Work is officially over: last day was yesterday. No, it has not sunk in; maybe around Tuesday. It was a little surreal leaving after three years almost exactly.
So for the next week until we leave, I'll be tying up ends: taking cats for shots, clearing out house for our friend to 'rent' the place while we're gone (I use " because he's watching our 3 cats... so basically, he's house sitting for 6-8 months), and packing and getting the little vw ready for a cross-country drive to Cali. Oh, and continuing to try and wrap my head around what I have gotten myself into.
